Tuna Burgers

2 (6 oz.) cans flaked tuna, drained

½ cup panko bread crumbs

¼ cup green onions, finely chopped

3 Tbsp. fresh parsley, minced

2 cloves garlic, minced

¼ tsp. salt

¼ tsp. pepper

Juice of ½ lemon

3 Tbsp. sour cream

1 egg

4 English Muffins

1 small tomato, sliced

lettuce

 

Directions:

  1. Combine tuna, bread crumbs, green onion, parsley, garlic, salt, pepper, lemon, sour cream, egg, and mix well with your hands.
  2. Form into 4 patties (they will be wet).
  3. Place on a greased baking sheet and bake for 20 minutes at 400°.
  4. Serve the burgers on toasted English muffins with romaine and sliced tomato.
  5. Spread additional sour cream on each burger, if desired.

 

Yields: 4 Burgers
