Happy Easter!

It has happened!
We have been waiting and waiting and waiting and waiting for this day.
Babycakes has finally decided it’s more cool to walk than “scooch”. We were starting to worry a little as her 18 month mark is quickly approaching. She had no problems getting around. She “scooched” so fast that she could keep up no problem. The reason we were starting to worry was because her one leg looks as if it’s going sideways when she does walk. She had no problem holding our finger and walking but not enough confidence to let go.
I always said she is going to “run” instead when she actually gets going and I was right. She is running every time she goes.
I think things just may have gotten a bit busier… stay tuned!
One of my dream jobs would be to be an Archaeologist. There’s just something about the mystery of what you may find. The history involved is incredible and the stories connected with the “finds” must be so fascinating. I am sure it is “back breaking” work. When I traveled to England, I had heard there may have been a way to join a dig for a day but unfortunately, it never worked out. If I ever hear of anything around here- I am definitely going to try it out.
The closet thing I have ever done to digging something up (beside matchbox cars in the sandbox) was digging for gold in New Zealand. It wasn’t an “authentic” gold dig but it was fun and I got my little vial of gold flakes to prove it. I did it in the little town of Ross. It is located in the Westland District on the West Coast of New Zealand’s South Island.
I’m going back 12 years! Sorry Dad! I think this is such a funny picture and it makes me smile every time I see it. My dad has had an afternoon “siesta” as long as I can remember. He can fall asleep at the drop of a hat. It’s never long, about 20 minutes but it gets him through the rest of the day. I always thought he was crazy doing this… wasting his day.
One thing I have noticed since having kids is “I am my father’s daughter”. Not that I get to nap in the middle of the day (almost impossible) with 2 little kids but I definitely could. It seems from the few times that I have got to nap, I can also fall asleep “at the drop off a hat”. I only need that 20 minutes and I feel refreshed.
This photo was taken as my dad had his afternoon “siesta”. He was sleeping so soundly that he didn’t realize we were “decorating” him with my nephew’s toys. He woke up a little while later and was utterly surprised- I wish I had a picture of his reaction upon waking. It was priceless. Thanks for the laugh, Dad! Love you xoxo
I think being a “girl rocker” would be the best! I wish I had the talent, the look, the attitude and mostly the confidence. I know I would never make a good one but it is fun to think about. It all goes back to having an incredible talent that makes people feel connected through their music…. their passion. What a gift.
I met Emm Gryner back in 2011 while she played in a nearby town along with another fabulous female artist (she will be another Wicked Wednesday). Emm is an incredible talent and she has done some pretty amazing things. She is also part of another dynamic girl group “Trent Severn“. If you haven’t been introduced to Emm or Trent Severn- get on it! You won’t be disappointed.
Seems I am getting too far ahead. Mother Nature is still not done with us. I have already been dreaming of the beach, BBQ’s and warm weather. We have been getting some pretty warm days which has been nice not having to layer up in winter coats and boots. We had our first campfire the other night along with our first Smores’ of the season. We had our neighbours over to help us in welcoming spring. It did not last long as the rain came BUT it took the last remaining snow away with it! Love seeing the grass. This is what I woke up to this morning…
On to happier thoughts…
So, you know how I said last Thursday that we loved going to the beach in the winter? Well, we decided to take the girls! Technically, I know it is not winter anymore but it has been such a long one and we are finally able to see the grass. We have had a few “warm” days at about 14-15 degrees so it is making me have spring fever!
My hubby was on holidays last week, so one evening we decided to take a mini-roadtrip to the beach. It was awesome! The weather was amazing. I even had to shed a layer as I dressed us pretty warm thinking it would be colder by the lake. I was wrong. The lake still has alot of ice on it but it looked pretty neat with all the sand hills as well.
Our evening was filled with stone collecting, stick throwing, stick fishing, stone skimming, sand crawling, picture taking and playground playing. It was the perfect evening to get us in the mood for the warmer weather and we topped it off with timbits and a restful night sleep (as both kids slept soundly through the night). Ahhhh, come on summer!
Here we go again. Doing this menu plan weekly (I used to do bi-weekly), really makes me realize how quickly the days are going. Last week, I made two new dishes that have definitely have made it into my recipe binder. The “Oven- Baked Cod” and the “Sour Cream Enchiladas” were both excellent and I will definitely enjoy them for years to come. I love finding new recipes that are so delicious and so easy to make! I posted the enchilada recipe last night and the cod recipe will be in the near future. On to today’s Menu Plan Monday…
Monday- Leftovers
Tuesday- BLT Wraps / Caesar Salad
Wednesday- Crockpot Beef & Broccoli
Thursday- Potato Soup / Biscuits
Friday- Tacos / Veggie Stix/ Hummus
Saturday- Homemade Pita Pizzas / Salad
Sunday- Easter Dinner! I’m bringing Amish Broccoli Salad
Have a great week! 🙂

I tried these on Friday night and they were not only delish but so easy to make! I will definitely be putting these in my recipe binder. They are very filling so you don’t need a lot to go with them. I paired it with veggie stix and hummus but a salad would work as well. The only thing I changed was adding diced red pepper instead of green chilies. The link for the original recipe is down below.
1 lb chicken breast, diced
1 medium onion, chopped
1 Tbsp. vegetable oil
8 (8”) flour tortillas, softened
1 ½ cups cheese (Monterey Jack or Mexican), grated & divided
1/4 cup butter
1/4 cup flour
1 (15 ounce) can chicken broth
1 cup sour cream
½ red pepper, chopped fine
Directions:
Yields: 8 Servings

This is the easiest salad ever! So delicious… I could eat the whole thing myself but I can’t. I have to share with the little babes! One of Zoë’s favourite things is marshmallows so you know this is a major hit with her.
1 cup mandarin orange sections
1 cup pineapple tidbits
1 cup coconut
1 cup coloured miniature marshmallows
1 cup sour cream
Directions:
Yields: 6-7 Servings

This may seem a bit weird but I have always wanted to be a “cartoon voice”. I think this would be so fun! No, I can’t sing or anything like that but I do have a bit of a high pitched squeal-y voice. I think it would be so awesome to see a cartoon on a big screen that sounds like me. I think my girls would probably love this as well! I pretty much figure that Disney will not be calling me out of the blue but it’s a good one for my bucket list… If anyone knows of a little “voiceless” cartoon in need… give me a shout!!!
Even though I have no cartoon character to give a voice too, I have had a few cartoon caricatures made of me! My sister-in-law is of great talent and has did a few for me in the past. She is so awesome! Here are my cartoons.
